However, this is not to say that the list is only for the new vegans. Vegans who have been on this journey for years might find many of the recipes familiar, and even if they are not, the plethora of recipes might help you update your weekly rotating dinner menu.

The chewiness of the roasted shiitake mushrooms with garlicky umami flavor paired with crunchy fresh lettuce and cucumber makes for an addictive vegan sushi. You can make a vibrant carrot-ginger dipping sauce to pair with this sushi.

12. Sesame Soba Noodles

Sesame soba noodle is one of the more simple and easy vegan recipes you can make for lunch or dinner. Soba noodles are made with only buckwheat flour and water, which means it is naturally gluten-free. They have a wonderful nutty flavor and chewy texture. 

Unlike pasta, note that you do not cook soba noodles in salt water. You can have the noodles hot with broth or cold with a sesame-ginger dressing. Also, add veggies of choice for additional texture and flavor.
