Chicken Enchilada Ingredients

Tortillas:
Around 8 corn or flour tortillas are needed for this delicious recipe. It is okay to use store-bought corn tortillas. If desired, homemade corn tortillas or flour tortillas can also be used.
Enchilada Sauce:
To make this dish you'll want about 2 cups of enchilada sauce. Flavor-wise, it's highly suggested you make your enchilada sauce.
There are two appetizing versions-a quick Tex-Mex with chili powder, tomato paste, and broth; or an authentic one made from whole dried chiles and Mexican chocolate. Both are easy to make and may be prepared in large batches for later use.
Shredded Chicken:
Any leftover shredded chicken will do. If you have no pre-cooked chicken, it is quite simple to make at home. You can shred a store-procured rotisserie chicken. You will need around 1 ½ cups of cooked shredded chicken.
Shredded Cheese:
Take about 2 ½ cups shredded cheese. The classic "Mexican-style" pre-shredded cheese found in most supermarkets works wonderfully.
Similarly, cheddar, mozzarella, or pepper jack cheese will do fine. If you want to do something very traditionally Mexican, Oaxaca, Chihuahua, or Asadero will be great as well.
